My smoked briskit has reached first temp. I wrapped it in paper and back into the smoker til 204 degrees, another 4 to 5 hours. 🍽

I scored a righteous full packer briskit today for a great price. Portioned and trimmed down for the smoker in the early morning. A layer of yellow mustard and then my rub will yield great flavor and tenderness. 12 to 13 hours at 225 degrees.🍽
