The entire point of the Epilogues is that canon no longer applies. The comic is over and isn't going to continue.
Meat and Candy are simply two readings from a fan perspective of how to interpret that.
Either with more connections to the main comic, or with a focus on it's characters

Personally, I'm of the opinion that Candy is just as canon as Meat is.
One is only considered "more canon" than the other because it has more connections to the original Homestuck comic.
They are both their own stories, and they're pretty obviously going to eventually end up merging in HS2.

Now it would be a different timeline with the addition of Gamzee, yes.
The benefit of John's powerset is that he is effectively been unstuck from anything that could be considered canon, dubious or otherwise.
His actions are capable of creating new stories, since he is not beholden to this one.

Yes and no.
John's retcon abilities do not erase timelines. They still exist and are folded into the dreambubbles, but his power is unique in that it is able to modify the Alpha Timeline.
He's essentially just making a new Alpha Timeline.

Also John's retcon power is basically just unrestricted time travel. So any length of time she would have been searching for is irrelevant if he can just appear in front of her.

Terezi's spent her search in the event horizon of the green sun's black hole, causing some heavy time dilation.

i would consider the events that primarily composed homestuck 2's initial run were just a PR disaster lain end to end.
anyone who says the epilogues are the most atrocious shit ever mostly just have not engaged with it.
