idk where in the order ima be for you but ima suggest for hair color that its black at the roots and goes to a purple and transitions to a lighter purple at the ends. so basically a black to lavender gradient.

Also a cool thing you might be interested in is death masks. Perhaps some of the soul plants could put off fruits or seed pods resembling the soul it consumed.

perhaps he could recycle lesser souls and combine/stitch them together into stronger ones he needs for spells via the sap from some of these plants.

just remember cold = less energy. so if its a colder enviroment then there are going to be less vivid and diverse plants. UNLESS they are getting nutrients from something else like devouring souls

plants growing on the lower end of the "energy spectrum" would likely be taller and leggier but with more spaced out leaves. plants with more energy could be super thick and potentially have more vibrant patterns or more advanced behaviours due to having the excess energy to devote to evolution

also consider the fact that there could be light lin the shadowfell just not on a spectrum visible to humanoids. such as infared or xray even. the more energy the type of light/radiation they use gives can change how they grow.
