I got it working on my Steamdeck but running the installer through Steam like you said. Works great.
If you're running a gaming PC there's no reason to not have Steam open 24/7 imo.

Proton has made some games MORE stable on Linux than on Windows.
The only reason I run Windows is for VR. It's just not stable on Linux.

I've had good luck with gaming on PopOS, but you gotta be ok with it being downstream of Ubuntu which is a plus for me but a turn-off for a bunch of people. 🤷
