When my wife makes spaghetti for everyone else, I pour the spaghetti and meat sauce over wild rice instead of pasta. I'm not diabetic, but I'm 58, and don't want to be a diabetic. With the wild rice, I avoid the "crash" later; so I'm also avoiding the blood glucose spike...and plummet. It's tasty!
