I was following a Youtube channel (Travellin' Young) about an American family who moved to my country (Denmark). This was the first time I learned about that taking your paid time off could be a problem in other countries. 5 weeks is required here by law but most people have 6 weeks. 1/2

Well, for most people it’s 37 hours, but public employees typically have paid lunch breaks, which effectively makes it about 35 hours a week, I guess. Oh, and by the way, we’re no longer the happiest country – just second now! 😉

Yep, Pizzeria, that's the one I use most of the time. In other news, my Kenwood mixer just broke down the other day (about time, but still a crisis), so might finally have an excuse to buy a spiral mixer 🤩

The Caputo flour is great, but whatever you choose you should use tipo00 😊

If you're not happy with it, I would suggest you to simplify it. Not all kinds of flour are ideal for proofing in days and you can make great dough in 24 hours or less. Heck, you can make great pizzas in three hours. I use the pizzApp app - which makes it easier to experiment with the dough 🍕
