I think they addressed this in the book and said that would just be passing the buck to future people, and that Sauron would always remain a threat as long as the ring existed, and there would always be the risk of the ring falling in to his hands.
Canonically: there's a lot of messed up monsters that could be in the sea and would take it and/or give it to Sauron, or, best case, in 100,000 years it washes back on shore and maybe things are better for him then.

because Sauron would just conquer middle earth anyway, he outnumbered them like 10/1, no way they were winning that shit. from his perspective the ring would've just been a "nice to have" situation
bc the ring can essentially teleport itself to a host, it has a will of it's own which is also why it corrupts people, so the only way to really be rid of it is to destroy it
sauron's actually a GOATED diver. only reason that's not common knowledge is because have you SEEN any oceans in mordor? yeah i don't think so. but if he knew the ring was there? he'd have it within DAYS

It was too late to go that direction for the most part because that's where they were looking for them. And the idea was they'd just be postponing the issue
