Animal Crossing. Stardew Valley. The Sims. Debatably the entire class of 'factory' games like Satisfactory, Dyson Sphere Simulator, etc. Rimworld, except that it mirrors whatever degree of monstrosity your heart harbors back at you.

Steam has an entire, well-populated tag for 'cozy' games.
