I forget where I read it (NYT Cooking perhaps) but someone tested cut side up vs. down for roasted brussels sprouts and recommended cut side *up* for better browning, postulating that it allows internal moisture to escape upward and out of each piece.
I think it kinda depends on what you want. I prefer mine to be more melted in the middle, face down gives a crispy outside, caramelized "face" (especially with the vinegar) and a steamed melty middle

Sounds good! Im making French onion soup, pierogis & bigos for lunch then crown roast of pork with gravy, rosemary potato wedges, cranberry sauce, caramelized broccoli and a tomato & red onion salad. Then tomorrow is prime rib, mashed potatoes, creamed spinach & corn souffle.
Tonight is tamales, tamales, and more tamales, Mexican rice, red chili, and…ham 🤷🏻♀️. Tomorrow is steaks, sautéed mushrooms, brussel sprouts, potato gratin, and salad. 🎄
I too am doing a tenderloin. In a salt crust. I'm doing brussel sprouts in filthy garlic-shallot-white wine-blue cheese-cream sauce. 10/10 best meal of the year.
steam some carrots then toss them in a sauté with some wilted onions drizzle some honey and sprinkle a little cayenne people will think you care about their health
I made a chipotle salsa last night for the carne asada im going to marinate today for tomorrow. Veggies? Uhhh are in the salsa and on top of the taco? 🤣🤣🤣
I’ve done it enough that I’m used to it. Tomorrow’s main will be a first for me: Porchetta. Just gotta give it 110%, leave it all out on the field, etc…
Ham and my favorite cheesy scalloped potatoes. I wish I liked beef tenderloin or prime rib. I've tried a couple different ways to cook them and it's just not been great
