sodium could be good. celery can already taste slightly salty depending on where you get it, but i'd love to see it amped up. a naturally-salted tomato or pineapple would hit unbelievably hard

Varieties like Kakao and Kumato are frequently described as "lightly salted" in taste tests.
I grow kakao, and people do like it a lot
Somebody should cross breed a ham tree with a pineapple plant.
