honestly the best way to handle edits is to make the edit history transparent on the post, and to show clearly that the post was edited from it's original version such as an indicator label or such
The way Masto does it is not perfect but it works. People who liked or boosted a post (possibly also those who replied) get notified on edits, and you can access all successive versions of the post (but not compare or diff them)
