Not really crazy, just elaborate for me. Sourdough bread or a Italian loaf cut into thick slices and loaded up with your spread of choice, swiss cheese, mozzarella and cheddar.
Bonus points if you turn it into savory French toast before turning it into a grilled cheese.
Requirement for a *real* grilled cheese. (Don't mistake me: I'll make cheese sammiches with fancy cheese and fancy bread and LOVE them, but "grilled cheese" to me *has* to be plain bread + American.)

I’m so basic. It’s SO GOOD. I used it on toasted French bread instead on garlic butter to go with lasagna and it was a quiet dinner table—that entered the annals of the clean plate club.

Once you brown the first side flip it then put some shredded cheese on that side
Brown other side flip it brown the cheese and put more cheese on that side
Then flip and brown the cheese on that side
Now you have multiple levels of cheesy goodness

Get burger patties and sub bread
Toast the bread in butter and cook the burger to med Rare and pile on any cheese and all the veggies you could want and Mustard, mayo and ketchup

Trader Joe's English cheddar with caramelized onions on sourdough. And I endorse mayo for the perfect crust (spread the thinnest possible layer on the outside of the bread).
