- kayaking into a large school of cownose rays in MD
- diving to a sea turtle cleaning station and seeing them lined up like a car wash (HI)
Of all the species you could encounter, that's not the worst, but I can imagine the surprise....
- being beneath some big manta rays as they swooped through an underwater canyon
- figuring out a moray eel and a grouper i was watching were coordinating a hunt together
- befriending a batfish

Watching a camp dog try to chase an ermine out of camp (he was there to chase out the chipmunks to avoid food conflicts and was carefully chosen to have no real prey drive so he wouldn't eat them). Ermine 1, dog 0

Seeing a female humpback breach in Alaska. "There she blows."
The arctic hare that would not get out of the trail and was posing JUST like the illustration of Peter Rabbit.
There's a wolf. Gliding through the valley just below us with something grey and squirming in her mouth. I couldn't see it well, but the wrangler had binocs...it was a PUP!
(I hope the "or" in the question means that this counts)
(This was 15 years ago, and I doubt that snorkeling expedition qualified as "ecotourism," but I'm still grateful for the once-in-a-lifetime encounter.)
