This probably isn’t what you’re looking for, but you may appreciate this anyway. Mcsweeney’s publishes hilarious fake children’s encyclopedias such as “Giraffes? Giraffes!” “Your Disgusting Head” and “Animals of the Ocean (In Particular, The Giant Squid)”. https://store.mcsweeneys.net/authors/dr-and-mr-dorishaggis-on-whey
I’m a big fan of the Over and Under series by Kate Messner and Christopher Silas Neal. If I had to pick one, I’d start with Over and Under the Pond. It’s all about ecosystems, and the language is fun to read.
We read it every night for weeks, maybe months. I would try skipping words to get through it and got caught every time. Was more successful making up silly stuff.
Happy as a Tapir. Its a random book that you probably cannot vet anymore.
Wutaryoo is a great book we bought for my son. It's about an animal that goes in search of its origin story and it is fantastic (especially considering my son is adopted).
My favourite Dutch author Annie M.G. Schmidt who, like Roald Dahl, was always firmly on the children’s side against the adults. Some of her books are now in translation.

My (now college age) son is still sleeping (mind you, it’s 1:23 PM 🤣) or I’d go look and see what else we kept

There are sooooooooo many, but if I had to grab just one book, it would be this.
