A good time to point out that the Dept of Justice policy of not indicting sitting presidents is not in the Constitution anywhere. Search for those words and you will not find it. Nor obviously will you find any words saying former presidents are immune. It's all extra-constitutional.

However, I read a theory where the dismissal somehow protects the case from the incoming administration, perhaps allowing it to be resumed in the future.

The people who think he somehow would have actually been convicted by HIS OWN DOJ are sadly delusional.

The truth is simply that the president can fire any person under him who tries to prosecute him. Thus federal prosecution of a president would be untenable, but not unconstitutional.
Why not just say the truth?
Why give him cover? Make 45 order the charges dropped.
Also the pardoning of political violence is definitely not going to up that violence by an order of magnitude in the next election. Not at all
I know many Trump supporters (most Israelis unfortunately) who think there are still checks and balances left, and there's no real risk.
And I seem to recall that the convention originated with a memo produced in the Watergate era, re how to deal with Nixon.
If they had been dismissed with prejudice (which is what Trump's lawyers wanted and didn't get), the charges would be dead forever.

A judge and court have to abide by that decision

Dismissing now, without prejudice, lets prosecution resume in 2029. Had this not been done, Trump would have simply ordered the DOJ to drop the charges next January.
Instead, most of them stayed home: Trump actually lost support this election, but he won again.
This is what America is. At this point if you're surprised instead of just disappointed...

The ENTIRE REASON the United States exists is because the Founders did not like the idea of a King having unconditional immunity to do whatever they wanted. It was like a whole thing! They fought two wars over it!
