One guy in Kansas bought truckloads of cheap expired Gummy Bears for cattle feed.
An extreme example, but cattle feed is itself heavily processed. "Free range grazing" is slower than feed in raising cattle.
Free range cattle are generally grass the whole time certainly, but there's always that final step where they might not be.
Show me which nutrients are depleted after turning the potato into a slurry to make a Pringle chip.

I guess this is the difficulty with the word 'processed' because there's a huge factory drying, crushing and mixing those leaves. But it all could be done at home, with effort.
I mean... "this thing needs water to be added to it, therefore is being prepared by me and is an ingredient not a food" might apply to tea but it also applies to instant noodles.
Soy sauce. I cannot make that in my home kitchen. Is it ultra-processed? If so, then is the fried rice I make using soy sauce ALSO ultra-processed?
Hamburgers and pizzas are also more “constructions of food” than individual foods too. Any given one could contain many or no processed things, be “healthy” or “unhealthy,” etc.
