Gripen, however... it's not just that Gripen would be shot down before it even knew a F-35 was around. It has nowhere near the production capacity to serve Europe's needs.

We can't go fully independent from the US in this department, not in short nor medium term.
What need to do is to invest heavily into European military aerospace industry and start producing all parts within Europe.
Europe needs to begin building everything without anything American. Biden prohibited French and British from letting them allow Ukraine to use their long range missiles. Trump will do that with everything as Israel & the Swiss do.

We should keep it simple
The Gripens use American engines and the US just stopped Columbia from buying them. If we cancel our F35 plans again the Americans would 100% stop us from buying Gripens instead.
So, we'd have to go with either Eurofighters or Rafaels.
