The fatality rate has been really high (90% or more) in most mammals. Cows have been hit mostly by a weaker strain (and I've heard 10% for cattle death). Even if humans were hit with something that "only" killed 10%, that'd be 30 million Americans. CDC estimates 25% of Americans would likely die.

There's a dangerous assumption that resistance to bird flu is a stable, heritable trait. It could be different immune response because of dose or previous exposure and new chicks aren't immune, and even if it is heritable, it's immunity to a strain of the virus that might evolve in the meantime.
