I have seen it argued that the idea English good is bland is a post industrial revolution thing - you showed you could afford refrigeration by not spicing meat. Historically the meat was very off and the cuisine surprisingly spicy.

I had read that upper class English food used spices when spices were expensive and hard to come by. When they were easier to get and relatively cheap, the upper classes went for blander food, and everyone else followed them.

Seriously? I'm pretty sure it's largely accepted that all spice everywhere was originally used to cover the taste of rotting food.

I think that's largely a myth to be honest. Salting, drying, pickling etc were used to preserve food. If you think about it, spices were expensive and used for trading, so putting them on 'off' food would be, if anything, limited to the rich, and why would they do that over just buying fresh meat

You're obviously the expert (everything I say sounds sarcastic, but I mean that), and the messages don't convey it all - but, there's a few things here.

There's a difference in the academic - spice was not used to cover off meat - and the prosaic - more salt does make that taste better longer.
