So the subreddit apparently about posting meals that make you feel a little better, and as someone who has battled depression I've definitely made a meal that I've looked at and gone "yeah, at least I can make something this good".

Leave the skins on. put it on a baking sheet that can contain juice leakage. bake at 350 for 45-75 minutes (depends on size).
Best as a side dish, but I've had it as a meal before.
