The local nature preserve has a stand of maple trees and the rangers there are tapping the trees and making maple syrup. Krissy, who walked Charlie there this morning, got a little bottle of the stuff, just as they were done with a new batch. It is shockingly flavorful.

When I worked at Hale Farm (a quarter of a century ago), the best gig during the pre-village season (the buildings weren't heated) was to get to run the evaporator.
And, of course, it was necessary to QC test the syrup at regular intervals...
Bet that Maple syrup tastes like Mtn Dew Baja Blast and has trace amounts of Meth & "the cocaine" in it.
Now know he did not make it because we needed it.
He made it for my sake to pass down generational knowledge.
I will never do it - but know how and not from YouTube.
