I've been on the lots of cheddar diet my whole life and I'm not skinny. But now I know if anyone has anything to say about my body, I can tell them I'm dieting and it won't be a lie.
Calcium, protein, some interesting micronutrients that have potential to follow Vitamin D as a miracle cure...yes, eat more cheddar (or edam, gouda,...).

You can make it yourself as a tastier kid-friendly (~5+ supervised) kitchen science project! Cheddar+ Sodium citrate+H2O —heat—> cheese sauce! (Technically you boil the small amount of water, dissolve ~1/2 tsp sodium citrate, remove from heat, add pieces of cheese.)
I loved reading about the cheese shortage and being confused because cheese was actually cheaper here during the same time frame. I know that makes me a monster, buuuuuuut…
California does produce plenty, but in terms of the overall bounties produced by california as a percentage or the extra sharp per capita it just doesn’t hold up.
They can make good cheddar but it’s not deeply rooted in their personality.
I'm either "eat some cheese" or "drink some water" about almost any minor discomfort, to the point where my kids are like "I know you're just going to say 'have a slice of cheese' but..."
I'm gonna say hold up because I have shaky blood sugar not due to diabetes and the fix is always eat some protein/fat. I am a sample size of 1 but the quickest thing to help me stabilize is two slices of cheese.
In all seriousness, I take meds that make me forget to eat and I always have plenty cheese around for those “I forgot to eat today and now I’m dying” moments
This (I imagine the same meds) is why I’ve taken to starting the day with a 4 oz tub of cottage cheese and a sprinkle of Lawry’s seasoned salt, also I am 75 years old
My brother, who inherited her lactose intolerance (as well as her allergies to alcohol and chocolate), is on a first name basis with multiple cheese mongers
This is me, I am the lactose intolerant cheese obsessive.
I also have that lack of gallbladder issue so in instances like aged cheddar the fat that gets me not the lactose. You better believe I still cheese.
