My understanding is that (a) poultry operations are smaller, (b) it's winter so there's less interaction between poultry and wild birds carrying avian flu. Large poultry operations are all about profit, not robust production that can handle a few operations getting bird flu without shutting down.

Had another thought. Grain fed beef and grass fed beef taste quite different. Tastes would play a part. I was born and raised in the US, and then moved to Britain and the Australia. Grass fed beef is much tastier. As for chicken, Australian chooks have no hormones or steroids.
I'd try some chook, but I don't care for the chicken. Beef is about who raised it, rotating to fields/pasture does do a lot of good. I will happily eat some wild deer since I did a lot as a kid and cleaner meat is tastier.

The short answer to this is that the EU put in place restrictions for what artificial hormones you're allowed to inject into cows whose beef is sold in the EU, which reduced acceptance of US beef, but the US hasn't been meeting the quota allowed for qualified beef (not even close, it's like half).
Typically, the US beef import/exports tend to be roughly even, but the US generally exports expensive steak & imports cheap hamburger, so Trump tariffs will just raise prices for poor ppl in the US & have no impact on (or reduce) the EU importing US beef.
